I have a particular fondness for soups. They are delicious and easily done, be it as a starter
or a main course. Especially during the cold winter months I really like soup. It is very
warming.
Clear Vegetable Soup
1 tablespoon butter OR
oil of choice
1 small onion
1 small carrot
1 small leek
1 small piece of celeriac
1 thick slice of butternut squash
Vegetable stock
Peel and wash vegetables and cut into very small pieces
Heat butter or oil in pan
Add ingredients and gently fry
for a couple of minutes
Add vegetable stock
and simmer for 15 minutes
Thick Vegetable Soup
1 tablespoon butter OR
oil of choice
1 onion
2 carrots
1 leek
1/4 - 1/2 of celeriac (depends on size)
1 thick slice of butternut squash
2 medium sized potatoes
Any other vegetable such as
broccoli, cauliflower, cabbage,
fennel etc in small quantities
(whatever you have in and think
might go well with the rest)
1 hand full of uncooked, washed red lentils
Vegetable stock
Peel and wash vegetables and cut into fairly large chunks (1 1/2 inch)
Heat butter or oil in pan
Add ingredients and gently fry for a few minutes
Add vegetable stock and simmer for 20 minutes
Drain into colander over a clean new pan
Mash the vegetable mix very finely, a
"passevite"
is ideal
Add vegetable mix back to liquid, stir well and serve
Garnish with finely chopped parsley and chives
A dollop of sour cream or crème fraîche can be added to the plate.
I particularly like grated cheese.
Serve with fresh crusty bread.
